Damontei Chocolate is a craft chocolate specialty shop. We make single origin chocolate, bringing out the best of each bean from around the world. We also make inclusion bars, focused on flavoring chocolate with the natural bounty of Shiga: local fruits, herbs, and ferments such as miso and sake kasu.
Cacao differs in flavor and character depending on where it was grown, much like coffee and wine grapes. At Damontei Chocolate, we import high quality cacao beans, roast and winnow them, and grind them into great tasting chocolate. From bean to bar, the entire process is done here by us.
